Drawing its name from the Japanese word for light, Akari illuminates each culinary experience guided by the principles of washoku with an emphasis on seasonality and harmony. This quality runs through every culinary element, from the clarity of a dashi to the philosophy of shun, spotlighting ingredients at their seasonal peak. Artisanal, small-batch sake selections complement each course.

Recognised on UNESCO’s Intangible Cultural Heritage list, washoku is the traditional cuisine of Japan reflecting centuries of shared practices and social customs. The menu at Akari moves between a classic à la carte menu and a nightly omakase experience, each shaped by the finest ingredients available through seasons and destinations. Preparation follows age-old techniques that are precise and unembellished, allowing each ingredient to speak with clarity. Guided by the steady hands of master chefs, omakase follows time-honoured rituals and the rhythm of the season. Translating as “I will leave it up to you”, the omakase experience is entrusted to the chef and unfolds for ten guests around a Hinoki wood counter. Omotenashi finds its origins in the traditional Japanese tea ceremony, a philosophy of hospitality in which every gesture exists solely for the comfort of another. At Akari, this spirit moves through the experience with quiet discretion, present in each interaction, leaving guests with a deep sense of feeling at home.
